Looking for some fairly easy Crock Pot soup Recipes?

winter is coming, my cooking skills are limited and im disabled and cant stand too long, I just got a new crock pot for my wedding,and I would love to make some easy-to medium soup recipes for it.anyone knows of any good ones? For Broccoli-Cheese Soup, here is one recipe (you can also substitute cauliflower instead of the broccoli for a change):


1 med. head of broccoli, separated into florets


1 med. onion, chopped


1 carrot, chopped


1 rib celery, chopped, or about 1/4 to 1/2 cup


4 cups chicken stock


1/2 tsp. Worcestershire sauce


1 cup Cheddar cheese, grated


salt and pepper


2 cups half-and-half or light cream


chopped chives


Preparation:


Combine broccoli, onion, carrot, celery, and chicken stock in slow cooker. Cover and cook on low for 6 to 8 hours. Puree in blender to desired consistency. Return to slow cooker. Blend in cream, Worcestershire, and cheese. Add salt and pepper to taste. Stir to mix well. Turn control to high and heat through; garnish servings with chopped chives, if desired.

The absolutely best soup I ever made was probably also the easiest. It was Pea and Ham soup. And it only had a few ingredients (800g ham hock 1 brown onion, finely diced 2 carrots, chopped 2 sticks celery, chopped 2 cups yellow split peas, rinsed well 1 bay leaf 10 cups water).





My alterations were that I used split green peas, and the butcher cut the ham hock into inch-wide slices - bone and all. When the soup was cooked, I removed the ham hock pieces, and blended up half of the soup. Then I removed the skin/fat/bones from the hock and returned the meat and the wizzed-up-soup back to the un-wizzed-up soup. It froze really well.





btw, when it cools, there is a gelatinous layer on the top of the soup - you can eat this, after mixing it back into the soup, or you can remove all/some of it. It is full of flavour though - so I wouldn't get rid of it all! :)
CROCK-POT BEAN SOUP





1 lb. white beans (Great Northern)


1 smoked ham hock or 1 lb. smoked ham, diced


1 c. celery, sliced


1 c. onion, chopped


1 c. carrots, chopped


2 bay leaves


1 (16 oz.) can stewed tomatoes


1 (10 3/4 oz.) can condensed tomato soup


Salt and pepper to taste





Soak beans overnight in 4 cups water. Combine all ingredients in crock pot. Add water to cover and mix well. Cover and cook on high setting 3 hours, turn to low setting and cook for 8 to 14 hours. Can be cooked entire time on high setting for 4 to 6 hours. Remove bay leaves when done.











BROCCOLI CHEDDAR SOUP





Boil a large can of chicken broth (48 ounces). Add 2 packages of dry Lipton golden onion soup; set aside. Boil a head of broccoli until tender; cut into small pieces. Add to broth.


Grate a 12-ounce package of sharp cheddar; add to broth. Season to taste with garlic, onion, and Italian seasoning. Make a mixture of butter and flour; add 2 containers of light cream and add to soup.





Soup can be put in a crock pot to simmer on low. Enjoy!
I can give you some basics...for a soup/ stew- cube some beef or pork but brown it in a skillet first. This is a must for good flavor and tenderness. Season as it cooks. After that its a cake walk. Add water and meat and what veggies you have and cook on low all day. Same for chili- brown the ground beef then add to pot. You can litterally add whatever you have laying around...











You can do almost anything in a crock pot and its a single mans best friend.
