GRILLED CHICKEN NOODLE SOUP
INGREDIENTS
1 tablespoon vegetable oil
3 skinless, boneless chicken breast halves - cut into bite size pieces
1 cup sliced carrots
1/3 cup frozen green peas
4 cups chicken broth
1 cup chopped celery
1/2 red onion, chopped
3/4 cup chopped fresh mushrooms
1 cup uncooked egg noodles
DIRECTIONS
Heat oil in a medium skillet over medium high heat. Fry chicken pieces in the oil until slightly browned and the juices run clear. Remove from the pan and drain on a paper towel.
In a large saucepan or Dutch oven, heat chicken broth over medium heat. Add the carrots, peas, celery, onion and mushrooms. Bring to a boil, then reduce heat and let simmer for 20 to 25 minutes. Add the noodles and cook for 10 more minutes or until noodles are al dente
CREAMY BANANA LETTUCE SALAD
INGREDIENTS
1 large firm banana, sliced
1/2 teaspoon lemon juice
3 tablespoons mayonnaise
1/2 teaspoon sugar
2 cups torn mixed salad greens
5 fresh strawberries, sliced
1 tablespoon salted peanuts, chopped
DIRECTIONS
Lightly toss banana slices with lemon juice. Place 1/4 cup in a small bowl; mash. Stir in the mayonnaise and sugar. In a salad bowl, combine the greens, strawberries and remaining banana slices; toss. Top with banana dressing; sprinkle with peanuts.Soup and salad recipes with no red meat?
MULLIGATAWNY
1 chicken, cleaned and cut into portions
2 l water
1 teaspoon salt
2 bay leaves
2 Tablespoons curry powder
1 tablespoon curry paste
1 cup green beans
1 cup diced carrots
2 grated apples
1 tablespoon cornflour
2 cups cream
Boil the water in a large pot
Add the chicken pieces, salt, bay leaf, curry powder and paste.
Cook for an hour, or longer, if necessary.
Remove the chicken and allow to cool.
Flake the meat from the bones and discard the bones.
Return chicken meat to the pot
Add the beans, carrots and apple.
Cook for a further hour until all the flavours have blended
Season to taste and add a little salt and pepper if necessary.
Thicken the soup with cornflour which has been dissolved in a glass of cold water
Add the cream during the last 10 minutes of cooking.
The soup should be thick.
Garnish with paprika and a dollop of cream
Serve with a bowl of hot rice and a small bowl of freshly chopped apples
DATE AND ONION SALAD
3 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon sugar
250g seedless dates, cut into quarters
1 onion, cut into rings.
Combine the vinegar, salt and sugar in a serving bowl and stir until the sugar dissolves.
Add the dates and the onions.

chicken %26amp; rice this is a recipie that my inlaws make with a little variation. (also great for using left over mexican rice[red])
for a large pot about 12 drumsticks or thighs or both
5 garlic cloves peeled %26amp; sliced
4 or so stalks of celery sliced
about 4 carrots sliced of about 1/2 pound of baby carrots
a large pinch of oregano %26amp; salt %26amp; pepper to taste
2 medium tomatoes chopped
3-4 medium-large potatoes cut in to 8ths
2 or 3 cans of 8oz tomato sauce
place chicken in a large pot with salt, pepper. oregano %26amp; tomatoes %26amp; boil covered for about 1/2 hour. add celery, carrots %26amp; potatoes %26amp; continue to boil for another 20 min. if you have left over mexican rice, instead of 20 min, boil for about 35 more minutes then add rice %26amp; tomato sauce %26amp; boil for about 15 minutes more.
if you need to cook rice, after adding the veggies %26amp; while they are cooking in a skillet saute about 2/3 cup of uncooked white rice untill toasted light brown %26amp; if you like you can mince a garlic clove %26amp; add to rice just before it is done toasting. when toasted light brown add to chicken soup %26amp; boil for at least 20 more minutes %26amp; then when soup is cooked let rest for about 15 minutes %26amp; garnish in individual bowls with cilantro %26amp; green onion if you like also you can add chili tepin in the bowls for that extra kick
