Potatoe Soup recipes. Looking for a family favorite.?

POTATO LEEK SOUP





3 leeks


4 potatoes, quartered


1/4 cup butter


1/2 cup milk


1/2 cup light cream


1 qt. water or chicken stock


1/4 teaspoon fresh chopped chervil


2 T each chopped celery and shallots


1/8 teaspoon celery seed


parsley to garnish





Peel and quarter the potatoes.


Prepare the leeks by removing the green portions, reserving for another use if desired. Cut down the center lengthwise and wash thoroughly. Chop the white portions finely and saut茅 lightly with the chopped shallots in half the butter for 5-7 minutes. Add 1 quart of water or chicken stock, 1/2 teaspoon of salt, celery, the quartered potatoes, and simmer 20-25 minutes. Remove potatoes and leeks to a small bowl, reserving using a potato masher, mash to a puree in return the puree to the cooking water. Stir in the milk, cream, and remaining butter, reheating one minute if needed. Season to taste with salt and pepper. Garnish with parsley and croutons





POTATO SOUP





6 slices bacon, pancetta or other pork


3 lbs. potatoes


2 tsp. salt (or to taste)


1 cup sour cream


1 stick butter


2 1/2 cups milk


2 tablespoons heavy cream


1/2 tsp. white pepper


2-3 green onions, chopped


2 tablespoons chives (optional)


1 small leek, finely chopped


3 cloves garlic, minced


1/2 cup shredded Cheddar cheese (optional)








Slice the meat into 1/4 inch pieces. Carefully wash and chop the leeks, discarding the top few inches (the toughest green part). Peel and mince the garlic. Slowly saut茅 these ingredients in 1 tablespoon butter. Place in skillet on low heat for 5-10 minutes, then on medium-high until golden and crisp. (Add garlic last and do not allow to brown).


Wash, peel and slice potatoes into quarters. In a saucepan cover potatoes with water and bring to a boil. Add 2 teaspoons salt to water and reduce heat to a simmer, continuing to cook until tender (about 40 minutes). Drain and return potatoes to saucepan, mash potatoes in the still-hot pan while adding chunks of the butter.





When the butter melts, stir in the sour cream. Pour in the cream and milk; add salt and pepper to taste. Sprinkle with chopped chives and/or scallions, and optional cheese, if desired.





POTATO CHEESE SOUP





4-5 large potatoes


1 cup sour cream


2 cans cheddar cheese soup


2 1/2 cups Milk


Salt and pepper


Beef bouillon


Garlic powder





Peel and cut potatoes into cubes. Boil potatoes until soft and drain potatoes. With potatoes in pan add soup and sour cream. Gently mix until blended. Add milk into potato mixture until combined liquid barely covers potatoes. Add salt, pepper, beef bouillon, and garlic to taste. Heat on medium heat until soup is warm enough to eat.


DO NOT BOIL.





Saltine crackers are a good compliment to this soup.








CHUNKY POTATO SOUP





3 cups diced potatoes


1/4 cup chopped onions


1/4 cup chopped carrots (optional)


2 cups milk


3 cups water


3 tbsp. butter


1 tbsp. fresh parsley


1 tbsp. fresh cilantro


1/3 cup ground Parmesan cheese


2 tbsp. all purpose flour


1 tsp. salt


1 tsp. pepper


1 tsp Mrs. Dash original


2 cubes of chicken bouillon


2 tsp. Italian seasoning





Bring water to a boil, add fresh herbs and vegetables. Let boil for 5 minutes, add milk, butter, boil for 3 minutes more; add spices and seasonings, then add flour and cheese.


Stir very well so that the flour and cheese do not clump; continue stirring.





Serve when vegetables are tender and flavors are well blended.





Serve topped with cheddar cheese and add a few saltine crackers.





You will love this! It is my favorite soup! Perfect for guests, a romantic dinner, or just relaxing in the afternoon.

This is something my mom made up once, I liked it alot.

add some rotel tomatoes and green chllies (if you have a lot of potatoes you could use a hole can)





Add cheese (whatever you have, whatever you like, I think she used american cheese slices)

Leek %26amp; Potato soup





4 slices bacon, coarsely chopped


6 leeks, thinkly sliced (or 3-4 big ones)


1/4 c. all-purpose flour


4 c. water


3 chicken-flavored bouillon cubes


2 potatoes, peeled and cubed


1 tsp. dried whole basil


1 c. half-and-half or milk or cream





Cook bacon in a Dutch oven over medium heat 5 minutes. Add leeks;


saute 5 minutes. Reduce heat to low; add flour, stirring until


smooth. Cook 1 minute, stirring constantly. Gradually add water;


cook over medium heat, stirring constantly, until thickened. Add


bouillon cubes, potatoes, and basil; cover and simmer 45 minutes.


Stir in half-and-half and cook until thoroughly heated.





Potato Poblano Soup


Yield: 6 To 8 serv





2 strips bacon, cut into 1/2-inch wide pieces


1 md onion, chopped


4 poblano chiles, roasted, seeded, peeled and diced


2 t salt


1 t fresh black pepper


3 garlic cloves, minced


1 qt chicken stock


6 md yukon Gold potatoes or 8-10 small red new potatoes, unpeeled, chopped


1 c Crema, Creme Fraiche or sour cream


1/2 c grated Anejo cheese (optional)





In a heavy Dutch oven or stockpot, fry the bacon over moderate


heat, stirring frequently, until it starts to brown. Toss in the


onions, half of the diced Poblanos, the salt and pepper and cook


until slightly golden, 5 to 7 minutes. Spoon out any excess fat.


Stir in the garlic and cook briefly just to release the aroma, 1


to 2 minutes. Pour in the chicken stock, add the potatoes and bring


to a boil. Reduce to a simmer and cook 20 minutes.





Puree in a food processor or blender just until smooth, being


careful not to over-process. Over-working will result in a gummy


soup. Return to the pot, stir in the Crema, Creme Fraiche or sour


cream and bring just to a boil. Stir in the remaining Poblanos for


garnish. Sprinkle with grated Anejo, if desired, and serve hot.





Potato Soup





6-8 medium potatoes


1/4 cup butter


1/2 cup flour


6 cup milk


2 tsp chicken bouillon


1/2 tsp salt


1/4 tsp pepper


1/2 lb. cheddar cheese





Peel, cube, boil, drain and ';mush'; potatoes to the consistency you


like (I like them lumpy, but my kids like smaller pieces). In


separate pan, melt butter, add flour and cook while stirring for


about a minute. Add half the milk and stir until lumps are out of


flour mixture. Add remaining milk and on med-high heat, heat to


a boil. Stir almost constantly or it will scorch. After boiling,


turn heat off and add remaining ingredients.





You can of course decrease the cheese amount. I also add broccoli,


carrots, corn, peas or any combination of those when I am in the


mood.
Cheesy Potato Chowder, ( Quick %26amp; Easy)





2 c chicken broth


2 c. water


1 c, diced Canadian bacon or lean ham


3 C. finely shredded cabbage


2 carrots, thinly sliced


1 5.5 oz pkg dry au gratin potato mix


1 c. milk


1 tsp. cornstarch


1 c Mexicana canned corn





In Dutch oven, combine broth, water, cabbage, carrots, ham, and dry potato mix with the sauce.


Simmer for 20 minutes.


Combine milk and cornstarch, add to soup along with the corn. Simmer 15 more minutes.
Grandpa's Cream of Potato Soup





6-7 potatoes-diced, 1 medium onion


Water to cover potatoes %26amp; onion. Boil til potatoes are done.





1/2-3/4 cup oleo, 1 can mushroom soup, 1 can cream of celery soup, 1-8oz. cream cheese, 1 teaspoon garlic salt, 1 1/2 cup milk, salt %26amp; pepper to taste.





Add cream cheese to potatoes %26amp; onion


Remove from heat, stir til cheese is melted


Add soups, oleo, milk, salt %26amp; pepper and reheat. Enjoy!
I love making Potato Leek Soup in the fall:





4 large Yukon Gold Potatoes


1 bunch leeks, white parts only, cleaned and sliced


3 T butter


1 box organic chicken broth


5 slices peppered bacon


1 container sour cream


1 tsp kosher salt


1/2 tsp fresh ground pepper





Chop potatos and place in chicken broth. Saute chopped bacon and leeks in butter. Salt and pepper to taste. Add to potato mixture and cook until potatos are tender. Remove half of the mixture and blend until thick. Return to soup pot and add sour cream, salt and pepper. Serve with warm Rosemary Potato bread and smoked gouda cheese, along with a baby lettuce salad with dijon vinagrette.

put rice and water in a deep baking dish,( a lasagna dish)


take your condensed soup and pour that in leaving about 1/2 of one can unused


stir well


you can add frozen veggies such as 1 cup corn, broccolli, onions, whatever you like... i used broccoli


or not use anything at all, its great that way too.....


take about 4 chicken breasts bone in or boneless and lay them on top


take your unused condensed soup and pour that on top of the chicken


cover with aluminum foil


bake on 400 for 45 minutes.....

Ingredients


1 can (11 oz) condensed fiesta nacho cheese soup, undiluted


1 can (10-3/4 oz) condensed cream of chicken soup, undiluted


2-2/3 cups Milk


1 can (10 oz) chunk white chicken, drained


1 can (10 oz) enchilada sauce


1 can (4 oz) chopped green chilies


Sour cream for garnish





Preparation


In large saucepan, combine all ingredients and mix well. Cook until heated through. Garnish on top with sour cream.

Buffalo Chicken Wing Soup Recipe





Ingredients:


6 cups milk


3 cans (10 3/4 oz. size) condensed cream of chicken soup, undiluted


3 cups shredded cooked chicken


1 cup sour cream


1/4 cup hot pepper sauce

Combine all ingredients in a crockpot. Cover and cook on LOW for 4 to 5 hours.

Take a couple pieces of boneless chicken breast and cut into small pieces. Coat the chicken with flour, salt %26amp; pepper and fry in a skillet with olive oil. Cook some egg noodles or amish noodles. When the noodles and chicken are cooked take the chicken soup and poor over noodles with only 1/2 can of milk. Mix noodle mix and chicken and put into a casserole dish. Then, take a tablespoon of melted butter and mix with fine, dry bread crumbs until the mixture is crumbly. You take hot dogs and cut them up. Add in mixed vegetables, chopped onion, tator tots, and a cheese sauce. Pour into casserole dish and bake until done.

Ten Minute Dinner





1 Pound ground beef


1 large onion, chopped


* 1 can (10 3/4 ounces) cream of mushroom soup, undiluted*

1 can (15 ounces) mixed vegetables, drained


1 can (5 ounces) chow mein noodles





Brown beef and onion; add both soups, mixed vegetables and 3/4 can of chow mein noodles. Pour into casserole dish. Top with remaining chow mein noodles. Bake at 400 degrees F. for 10 minutes or until hot.





NOTE: *Golden Mushroom with Sliced Mushrooms Soup can be substituted for the Cream of Mushroom soup OR Chicken Rice soup can be substituted for the Cream of Chicken soup.*

2 6 oz. cans tuna, drained


16 oz. egg noodles, cooked


4 hard boiled eggs, chopped


½ cup finely chopped onions


2 cans cream of chicken soup, reduced fat


2 cans milk


Bread crumbs/potato chips





Mix all ingredients except bread crumbs together and put in 9” x 13” casserole dish. Sprinkle crumbs on top. Bake at 325 degrees for 20 minutes.
There should be a warning on this recipe 'cause it's SO good and SO fatty!





Stuffed Spud Soup





2 lbs. frozen shredded hash browns, thawed


1/2-cup butter


1/2 cup chopped green onion


1 (10 oz.) can cream of chicken soup


Salt %26amp; pepper to taste


3-4 cups half' in half or milk


3 cups shredded cheddar cheese


Parsley flakes or chopped chives for garnish





Sauté's onions in butter. Add soup, half' in half or milk, and thawed potatoes. Stir in cheese and heat gently. Garnish and serve. Serves 8-10.

Try using sweet potatoes in the broth and ham bone and then using a food processor or blender break the sweet potatoes into a smooth paste and back into the broth as a thicknening and flavor agent. Ham and sweet pots taste really good together so as long as you use a chicken or veggie broth it should be really tasty.

    The site listed below has loads of budget recipes, but if you are getting food donations the best thing you can do is experiment and see how you can make ingredients stretch further yourself. My housemate works in a similar environment and she just adds whatever they have to use up to beef up stews, casseroles etc.





    If you have tins of soup in complimentary flavours, you could add these to chicken and stick in peas and other vegetables to make it go further.

    I usually just boil a few leg quarters, and add the noodles drain them both and boil them in chicken broth than add a little garlic powder, salt, pepper, and thyme.Any good recipes for Chicken soup?
    1 whole roasting chicken


    8 ozs. of kluski noodles


    1 bundle celery stalks, chopped


    1 bag of carrots, peeled and chopped


    3 16 oz. cans of chicken broth





    Roast a whole chicken and save the drippings- the best chicken flavor comes from there. Refrigerate if not using immediately. (If the drippings set up like gelatin in the fridge, you've got the really good stuff)





    Debone and cube the meat, set aside. Refrigerate if not using immediately.





    In a pot, add chicken broth, chopped celery and carrots. Bring to a boil and cook until veggies are softened. Add chicken meat and roast drippings.





    Heat until simmering. Serve in a bowl with crackers or float a baguette slice with garlic butter on top of the soup.

    Chicken Cheese Chowder





    A thick cheesy soup that is perfect for winter evenings.





    INGREDIENTS


    4 cups chicken broth


    1 1/2 cups diced potatoes


    1 cup diced celery


    1 cup diced carrots


    1 cup diced onion


    1/3 cup margarine


    1/3 cup all-purpose flour


    3 cups milk


    1 tablespoon soy sauce


    1 pound processed cheese, cubed


    2 cups chopped, cooked chicken meat





    DIRECTIONS


    In a large stock pot combine chicken broth, potatoes, celery, carrots and onion. Cover and bring to a slow boil for 15 minutes, or until the vegetables are tender.


    In a medium sauce pan melt butter over low heat, add flour and stir until smooth. Let simmer for 1 minute and then increase temperature to medium. Stir mixture constantly, while gradually adding milk. Continue to stir until thick and bubbly.


    Add flour mixture to vegetables. Add soy sauce and then gently stir in cheese. Continue to stir until cheese is completely melted.


    Add chicken, heat through and enjoy

    Classic Chicken Soup recipe:








    Ingredients (serves 6)





    * 1 x 1.4kg (size 14) chicken


    * 2 large brown onions, finely chopped


    * 2 cups loosely packed fresh continental parsley leaves


    * 4 garlic cloves, crushed


    * 60mls (1/4 cup) fresh lemon juice


    * 2 tbs soy sauce


    * 5 celery sticks, cut into lcm pieces


    * 5 medium carrots, cut into lcm pieces


    * 2 medium tomatoes, halved


    * Salt %26amp; ground black pepper, to taste


    * 1.5L (6 cups) water





    Method





    1. Rinse the inside of the chicken. Remove the tail and neck, and as much skin as possible from the chicken.


    2. Combine the onions, parsley, garlic, lemon juice and soy sauce in a large saucepan. Cook over medium heat for 5-8 minutes or until the onions are soft. Add the chicken, celery, carrots and tomatoes and season with pepper. Add the water and bring to the boil.


    3. Reduce heat to low and simmer, covered, for 1 hour or until the chicken is tender and comes away from the bones easily.


    4. Remove from heat, cool for 10 minutes and place the soup in the fridge to chill overnight. (This allows the fat to rise to the surface and set.)


    5. Next day, remove the soup from the fridge and use a large metal spoon to remove the layer of solidified fat from the surface.


    6. Remove the chicken from the soup and place in a large bowl. Use your fingers to remove the meat from the bones and shred into pieces. Discard the bones. Return the chicken meat to the soup.


    7. Bring the soup to the boil over medium heat and simmer until the chicken and vegetables are heated through. Remove the soup from the heat and skim a piece of paper towel over the surface to absorb any excess fat.


    8. Season with salt and ladle the soup into deep soup bowls. Sprinkle with pepper and serve.

    Chicken Noodle Soup


    INGREDIENTS


    1 1/2 pounds boneless, skinless chicken meat


    1/2 pound uncooked spaghetti


    4 cloves garlic


    1/4 cup chopped onion


    salt to taste


    12 cups water


    3 tablespoons olive oil


    DIRECTIONS


    In a large pot, bring the water to a boil. Add the salt and olive oil.


    Chop up the chicken, and add it with the onion and garlic to the pot.


    Break the spaghetti into small pieces, no longer than half the size of your pinkie; add to the pot. Stir. Let simmer over medium heat for 30 to 45 minutes.
    INGREDIENTS





    * 1 (3 pound) whole chicken


    * 4 carrots, halved


    * 4 stalks celery, halved


    * 1 large onion, halved


    * water to cover


    * salt and pepper to taste


    * 1 teaspoon chicken bouillon granules (optional)


    DIRECTIONS





    1. Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).


    2. Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop the carrots, celery and onion. Season the broth with salt, pepper and chicken bouillon to taste, if desired. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.
    Chicken Noodle Soup


    1 whole chicken


    3 big carrots (diced or sliced)


    4-5 celery sticks (diced or sliced)


    3 bay leaves


    1 tbsp poultry seasoning


    1 medium chopped onion


    2 garlic cloves (chopped or sliced)


    2 bags of frozen Reman noodles





    Boil chicken until done and then de-bone, de-skin, shred or cut up


    Strain chicken broth into large pan


    Add vegetables, garlic, bay leaves, cut up chicken and poultry seasoning - cook for 20 min. over med. heat


    Add noodles and cook over med. heat for 20-25 min. or until noodles are done


    Serve hot.
    CHICKEN CRACKER BALL SOUP





    chicken any parts (cooked and boned)


    1 box of saltine crackers


    6 eggs


    2 c. milk


    salt and pepper to taste


    you may add carrots, celery, and onion if you wish just like regular chicken noodle soup.





    Cover chicken with water. Add chicken stock, cover and simmer until chicken is done. Remove and debone. Crush (the whole box)crackers in blender or use a food processor, until they look like sand.


    Put into a bowl, add eggs mix slowly. Add the milk until moist. Roll into balls, larger than marbles, smaller than a ping pong balls.


    Bring the soup to a boil and add the balls.


    Cover and simmer for 15 minutes. Replace the chicken and enjoy.

    CHICKEN TORTELLINI SOUP





    9 oz. package frozen cut broccoli, thawed


    6 cups water


    3 cans condensed chicken broth


    1 (10 3/4 oz) can cream of chicken soup


    2 cups (about 4 breasts) boneless, skinless, split chicken breasts cubed and soaked in 1/2 cup dry vermouth (may substitute cooking sherry, white cooking wine or water if preferred)


    1 cup chopped onion


    1 cup grated carrots


    2 cloves garlic, minced


    1/2 teaspoon basil leaves


    1/2 teaspoon oregano leaves


    12 oz. package cheese tortellini (fresh or frozen)


    grated parmesan cheese (optional)





    In a large saucepan or soup pot, combine water, chicken broth, cream of chicken soup, soaked chicken, onions, carrots, basil and oregano.


    Bring to a boil; add tortellini. Simmer uncovered for 30 minutes.


    Add broccoli. Simmer an additional 15 minutes or until broccoli is tender.


    Serve garnished with grated parmesan cheese if desired.

    CHICKEN, LIME AND TORTILLA SOUP





    1/2 lb. chicken breast, boneless and skinless


    4 cups chicken stock


    juice of 3 limes


    1/2 cup tomato juice


    1/2 cup chopped red bell pepper


    1 tsp. chopped green chilies


    1 jalapeno, chopped


    1/4 cup cilantro, chopped


    2 tsp. Worcestershire sauce


    3 green onions, chopped


    1/4 cup rice


    1/4 cup corn


    1 avocado per each bowl (diced small)


    1 cup mixed Mexican cheese (shredded)


    1 tsp. minced garlic


    1/2 tsp. ground black pepper


    salt to taste


    tortilla strips





    Simmer chicken stock, tomato, Worcestershire, and lime juices with the jalapeno, cilantro for 45 minutes.


    While simmering; grill the chicken until cooked all of the way through, then dice into small cubes or strips.


    Strain soup and add green onion, chilies, red bell pepper, rice, corn, garlic and simmer for 20 minutes.


    Place the tortilla strips, diced Avocado and shredded cheese on a side plate to be added by the guests as desired. (To make sure that your avocado doesn't turn brown toss it in some extra lime juice.)

    CHICKEN CORN SOUP





    1 lg. chicken


    1 lg. onion


    2 stalks celery


    1 can cream of celery soup


    1 tbsp. salt


    1/2 tsp. celery seed


    2 cans creamed corn


    1 can whole kernel corn





    DOUGH BALLS:





    Can substitute two cans of can biscuits.





    1 c. flour


    1 egg


    1/4 tsp. salt


    1/4 tsp. baking powder





    Boil chicken until done. Remove from pot and let cool. Remove bones and skin. Add onion, celery, salt and celery seed to chicken broth. Cook until onions and celery are done. Add corn, creamed corn and celery soup to pot and bring to boil. Drop dough in hot broth and add chicken to broth, cut up in small pieces. Reduce heat and simmer for a few minutes

    After boiling the chicken, remove it and let it cool. Add a bay leaf, minced onion, chopped carrots, chopped celery, parsley flakes, salt %26amp; pepper to taste and chicken boullion. Simmer until veggies are tender. (Meanwhile remove chicken from bone and discard with skin. Chop chicken into bite size pieces and return to soup.) Add noodles and simmer till ready. Bon Appetite. ps. remove bay leaf before serving.

    4 russet or baking potatoes, peeled, cut into small pieces


    2 leeks, coarsely copped (white and light green only)


    2 onions, coarsely chopped


    3 ribs celery, coarsely copped


    4 chicken bouillon cubes


    1 (10 戮 oz) can Cream of Chicken Soup


    1 (10 戮 oz) can Cream of Celery Soup


    1 Tbsp. dry parsely flakes


    4 cups water


    1陆 tsp. kosher salt


    2 Tbsp. butter


    1 (12 oz) can evaporated milk


    Garnish: chopped chives





    1. Place all ingredients except evaporated milk and chives in slow cooker.


    2. Cook on low 10 hours, or on high for 5 hours.


    3. Stir in evaporated milk the last hour of cooking time.


    4. Garnish each bowl of soup w/ fresh chives.








    Boil the potatoes for about 10 minutes, then throw everything in the crock pot:

    Amazing Potato Soup





    6-- medium potatoes {pealed %26amp; cubed }


    1-- 15 0z. can chicken broth


    1-- can cream of chicken soup


    1/3-- cup diced onion


    4-- slices bacon cooked crisp %26amp;crumbled


    3/4 inch slice Velveeta cheese {cubed}





    Boil potatoes until tender set aside


    combine chicken broth and onion simmer until onions are tender. Add cream of chicken soup and velveeta stir over low heat until cheese is melted add bacon and potatoes. season to taste. Serve hot.


    With crusty bread or your favorite crackers.








    Cook the hamburger, then throw everything in the crockpot and heat until cheese melts:





    Hamburger Stew


    1 lb hamburger meat (cooked and drained)


    4 oz of velveeta cheese


    1 can corn (undrained)


    2 cans minestrone soup


    1 can water


    1 can jalape帽o ranch style beans


    1 can rotel





    Stir and simmer in a big pot! It's got a little kick to it, but it's so good!!





    Santa Fe Soup





    3 lb. hamburger, browned, drained


    3-7.5 oz cans green chili


    3-10 oz. cans Rotel tomatoes


    3-15 oz. cans stewed tomatoes


    3-15 oz. cans whole kernel corn (not drained)


    3-15 oz. green beans (not drained)


    1-2 lb. box Velveeta cheese, cubed





    Combine. Cook in crock pot until heated through.











    Southwestern Soup





    1 lb. ground beef


    1 medium onion chopped


    1 can black beans, undrained


    2 cups frozen white or yellow and white corn kernels


    1 can diced tomatoes, undrained


    1 can Rotel tomatoes, undrained


    1 lb. Mexican Velveeta, cubed





    In large skillet, brown beef and onion, drain. Combine all ingredients in crockpot, cover. Simmer on low, stir occasionally until cheese is melted. Continue to simmer until heated through, 4 hours.





    Beer Cheese Soup





    1/2 cup butter


    3 cups chicken broth


    1 tbsp. Worcestershire sauce


    1/2 cup fresh chopped chives or 2 to 3 tablespoons frozen chopped chives


    1 c. flour


    16 oz. Cheez Whiz


    3/4 cup beer, or use non-alcohol beer


    1 1/2 c. cream





    Melt butter; stir in flour. Add broth, stirring constantly, until thick, then add to butter mixture. Remove from heat; add remaining ingredients, except cream. Cook on low in slow cooker 4 to 6 hours; add cream the last 20 minutes. You can also add lightly steamed broccoli to this soup.

    This is a family favourite and with 5 kids that is a bonus.


    Potato Soup





    10 pounds potatoes, peeled and cubed (I use the food processor)


    1 small onion chopped


    3 tablespoons butter


    3 chicken bouillon cubes


    2 tablespoons dried parsley


    7 1/2 cups water


    2 1/2 cups milk 3/4 cup all purpose flour





    I also add ham or bacon if I have left overs and if not I just make as above.





    1. place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.





    2. At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.





    P.S. I also add a few carrots for a bit of colour and you may have to adjust your flour according to how thick the potatoes have already made the soup.
    Crockpot Lentil Soup





    INGREDIENTS:


    2 cups dried lentils


    8 cups water


    1 1/2 Tbsp. crumbled bacon or bacon bits


    1/2 cup chopped onion


    1/2 cup chopped celery


    1/4 cup chopped carrot


    3 Tbsp. snipped parsley


    1 clove garlic, crushed


    2 1/2 tsp. salt


    1/4 tsp. ground black pepper


    1/2 tsp. dried leaf oregano


    1 can (14.5 ounces) tomatoes


    2 Tbsp. wine vinegar





    PREPARATION:


    Rinse lentils; place in cooker. Add 8 cups water and remaining ingredients except tomatoes and vinegar. Cook on LOW for 8 to 10 hours. Add tomatoes and vinegar. Turn to HIGH and cook 15 minutes longer, until hot.

    Old Fashioned Vegetable soup


    2 Lbs soup bones/or1 lbs stew meat


    4 cups beef broth or water


    2tsp salt


    1 bay leaf


    1 small onion chopped


    1 cup diced Carrot


    1/2 cup chopped celery


    2 cups diced potatoes


    1 can whole Kernel corn


    1 can diced tomatoes





    Place meat, broth,salt, bay leaf,onion,carrots and celery in crock pot,


    cover and let cook 3 hours on high....remove bones.%26amp; bay leaf...chop meat then return it to the crock pot...Add potatoes,corn,%26amp; tomatoes....cover and let cook another 2 hours on high...
    :::Chicken Tortilla Soup:::


    Yummy Mexican chicken soup that is super easy, just dump the ingredients in the crock pot and let it cook! It is delicious!





    2-4 cans chicken stock (depending on desired thickness, personal preference)


    2 cans crushed tomatoes


    1 can diced tomatoes (can use another can of crushed if you don't like chunks or vice versa)


    1 can whole corn kernels


    1 can black beans


    1 small can green chilies (optional to taste)


    1 14-oz can enchilada sauce


    1 small onion (diced)


    2-3 cloves of garlic (minced)


    2 tablespoons fresh cilantro


    3 teaspoons cumin


    3 teaspoons chili powder


    Salt and Pepper to taste


    1.5 lb. chicken (cut into pieces and cooked, I use breasts, but any meat will do, sometimes I use leftover meat from a whole chicken and just shred it up... whatever I have on hand really. Sometimes I even make it with beef!)








    Optional Garnishes: sour cream, cheddar cheese, avocados and tortilla strips.





    I just dump all of this in the slow-cooker and let it go for a few hours, sometimes I need to add a little extra chicken stock, depending on how thick it is...








    For a great garnish, you could use store bought tortilla chips, but I like to make my own tortilla strips, and it is super easy! You need: 1 pkg. flour tortillas, and a few tablespoons of veg. oil. Just brush both sides of the tortillas with the veg. oil and cut into thin strips. Place strips on a cookie sheet and bake at 400 degrees for 7-8 minutes, turning them halfway through. They are crispy and delish in the soup!





    =] This is a favorite of all my friends and family!
    Healthy Chicken Chowder





    INGREDIENTS:





    * 1/2 cup chicken broth


    * 1/4 teaspoon black pepper


    * 1/4 teaspoon onion powder


    * 1 potato, peeled, cut in 1/2'; chunks


    * 4 chopped green onions


    * 1/2 pound boneless skinless chicken breasts, in 1-inch cubes


    * 2 cans (approx. 15 ounces each) cream-style corn


    * 1/4 cup mashed potato flakes


    * 1 cup skim or low fat milk


    * 1/2 cup shredded Cheddar cheese





    PREPARATION:


    Mix all ingredients except cheese, potato flakes, and milk in slow cooker. Cover and cook on LOW for 5 to 6 hours or until potatoes are tender and chicken is cooked through. Stir in potato flakes and milk and cook on HIGH, uncovered for 15 to minutes until chowder has thickened and flakes have dissolved. Top with Cheese Before Serving.
