Any good soup recipes for a party?

We're having a birthday party for our 2 year old. 30-40 people for casual dinner. I figured a couple of different soups with toppings might be fun and inexpensive. Does anyone have any good soup recipes and toppings that might go with them? ThanksAny good soup recipes for a party?
I think it's a good idea. You could serve creamy tomato soup with some grilled cheese triangles. Another soup i sortilla soup and that's always fun. You could set up a tray with the toppings: sour cream, cheese, fried tortilla strips, maybe some chopped green onion. here are two really awesome recipes that I have made before.





CREAMY TOMATO SOUP





The real trick here is that you roast your canned tomatoes with brown sugar before adding them to the stock. This delivers a deep, rich caramel goodness to the canned tomatoes. Again, San Marziano tomatoes are the way to go here.





Creamy Tomato Soup (Adapted from Cooks Illustrated)





* 2 (28-ounce) cans whole tomatoes in juice, drained, 3 cups juice reserved


* 1 1/2 tablespoons dark brown sugar


* 3 tablespoons unsalted butter


* 4 large shallots, minced (about 1/2 cup)


* 1 tablespoon tomato paste


* Pinch ground allspice


* 2 tablespoon all-purpose flour


* 1 3/4 cups chicken stock, homemade or canned low-sodium


* 1/4 cup heavy cream


* Salt and cayenne pepper





Heat oven to 450掳 F. Line a rimmed baking sheet with foil. With fingers, carefully open whole tomatoes over a strainer set in a bowl and push out seeds, allowing juices to fall through the strainer into bowl. Spread tomatoes in single layer on foil. Sprinkle evenly with dark brown sugar. Bake for 30 minutes or until all liquid has evaporated and tomatoes begin to color. When tomatoes are cool enough to handle, then peel them off foil; transfer to small bowl and set aside.





Heat butter over medium heat in a large saucepan until foaming. Add shallots, tomato paste and allspice. Reduce heat to low, cover, and cook, stirring occasionally, until shallots are softened, 7 to 10 minutes. Add flour and cook, stirring constantly, until thoroughly combined, about 30 seconds. Gradually add chicken stock, whisking constantly to combine; stir in reserved tomato juice and roasted tomatoes. Cover, increase heat to medium, and bring to a boil. Reduce heat to low and simmer, stirring occasionally, to blend flavors, about 10 minutes.





Remove pan from heat and puree soup using an immersion blender. Alternately, you could strain soup to separate solids and liquids and then puree the solids with a cup of the strained liquid until smooth and return everything to pot. In either method, once you have a smoothly pureed soup you should warm it over a low flame and add the cream, salt and cayenne pepper to taste.





Serve with croutons, cheese, fresh basil or chives, whatever seems good to you. This is also be quite amazing with a grilled cheese.





***For the parmesan toasts I brush some oil on slices of baguette, sprinkle with sea salt and freshly ground pepper and top with some grated parmesan. Toast until edges are lightly browned and cheese is melted.





*** This makes about 6 servings of soup so you may need to make a larger pot for your party

TORTILLA SOUP





Ingredients





1 Tbsp olive oil


4 garlic cloves, minced


2 onions, chopped


1/2 bell pepper (capsicum), red or green, chopped


2 jalapeno chili peppers, diced


2 chicken breasts, skinless


3 tomatoes, chopped


2 tsps cumin


4 cups chicken stock


1 cup corn, canned (drained) or frozen


1 Tbsp tomato paste


salt and pepper





To Serve:


8 corn [or flour] tortillas, cut into 1/8'; thick strips


canola oil, for pan-frying


2 avocado, halved, pitted, peeled, diced (optional)


1 cup Jack cheese (optional)


1/2 cup fresh cilantro leaves, chopped (optional)





Method


In a large pot saute the onion, garlic, chili peppers, and bell pepper with olive olive until soft.





Add the chicken breasts, tomatoes, cumin, and stock, and bring to a boil. Reduce heat to a simmer. When the chicken breasts are cooked through (about 15 minutes) remove from the pot and shred (use two forks to pull apart meat).





Return the shredded chicken to the pot along with the corn and tomato paste and simmer 30 minutes.





While the soup is cooking heat 1-inch of canola oil in a skillet over medium-high heat. When the oil begins to smoke add the tortilla strips in batches and fry until crisp on all sides. Remove to a paper towel lined plate and sprinkle with salt.





Salt %26amp; Pepper to taste. Serve topped with tortilla strips, avocado, and cheese. Garnish with cilantro and lime wedges. Serves 4-6








Tips:


If you don't want to fry your own tortillas you can substitute corn chips.





If freezing, let the soup cool and store in an airtight freezable tupperware or ziplock. You can fry the tortilla strips ahead of time and store them in an airtight bag in a dry, cool place for about one week. If they get soft just bake them for a few minutes until crisp again. To reheat the soup, let it thaw completely and then gentle heat until warmed through.





Feel free to throw in extra chilis if you like things spicy!Any good soup recipes for a party?
I would go with the normal, beef vegetable, chicken noodle or dumpling or both. :-) A nice Clam Chowder or potato soup. As far as toppings you could use French's onions, or crushed croutons. The thing about croutons is there are so many different flavors you could have a variety.





And no it's not tacky, it's a very good idea. Something different and soups very good in the winter time. And you can save on bowls by just using paper cups. That way it's more like a sample for everyone, soup is very filling.

Try Baked Potato Soup. It's easy and delicious and any topping that will go on a baked potato will go with this soup. My recipe is to dice up a cup of potatoes per person to be served and boil them in salted water until tender. Drain off the water and add a teaspoon of butter and half a cup of milk. (Per serving) Mash the potatoes and then slowly add milk and continue stirring until it is of soup consistency. Reheat slowly and add salt and pepper to taste. It keeps very well and I don't know anyone who is allergic to or doesn't like potatoes. Heck, my college roommates used to wake me up at 2AM and beg me to make it! And it's very inexpensive. Top with sour cream, chives, bacon bits, shredded cheese, pepper flakes, parsley, or anything else you can dream up! I hope the party turns out great. Have a good day.
I don't think it's tacky but I'm not sure what the 2 year old will think. Why not try a tomato soup (recipes are common on the web) or tomato and roast red pepper, then give people grated cheese, spicy chilli powder and dukka to sprinkle with to their taste.

how about taco soup, potato cheese soup, chicken with curly noodle or abcs.
I don't know...it doesn't seem very appropriate to have soup haha maybe a ';taco party'; would be a little more fun...don't you think? You could have soft shells/hard shells and choices of toppings all spread out on the table and lend a whole ';Mexican'; theme to the party...maybe even a pinata. i think one of the children s favorite would be a nice taco soup, make sure you get the big torttia chips to go on the side of your dish to dunk with, its nice and warm for these winter seasons.





Ingredients:


1 to 1 1/2 pounds ground beef


1/2 teaspoons garlic, chopped


1 large onion, chopped


1 - 16 ounce can tomatoes


1 - 16 ounce can tomato sauce


1 - 4 ounce can green chiles (optional)


2 cups salsa


1 can kernel corn with juices


1 - 16 ounce can pinto beans


1 - 16 ounce can kidney beans


1 package taco seasoning mix


3 cups water





For garnish:


cheddar cheese, grated


taco chips


sour cream





Brown ground beef with onion and garlic. When well browned, add the remaining ingredients and simmer for 1 hour.





Serve topped with grated cheddar cheese, taco chips, anda dollop of sour cream.





Makes 8 servings

Tips and Variations:





* If you are really short of time, just cook the soup for 30 minutes. I find that letting it simmer for that extra half hour blends all the tastes together even better, but it still works well in just 30 minutes.


* Substitute ground chicken for an even lower calorie soup.


* Using reduced sodium taco seasoning helps cut down the sodium content of this recipe.
I have a recipe for a great Taco Soup!! It is very easy and inexpensive and even those who are not soup-lovers enjoy it!! All you have to do is brown hamburger meat, throw it in a crockpot (or pot on the stove) with a can of kidney beans (drained), can of corn (undrained), can of stewed diced tomatoes (undrained), can of Mexican Rotel, package of taco seasoning, and Velveeta ( I use about 3/4 of the package). Mix this all together and let it get nice and hot!! Great with Tortilla chips!!! This recipe is very versatile!! You can add more cans of beans, no corn, more corn...make it your own!! Everyone I have fed it to absolutely loves it!! Good luck!!
