What's a good potato soup recipes?

POTATO SOUP





6 slices bacon, pancetta or other pork


3 lbs. potatoes


2 tsp. salt (or to taste)


1 cup sour cream


1 stick butter


2 1/2 cups milk


2 tablespoons heavy cream


1/2 tsp. white pepper


2-3 green onions, chopped


2 tablespoons chives (optional)


1 small leek, finely chopped


3 cloves garlic, minced


1/2 cup shredded Cheddar cheese (optional)








Slice the meat into 1/4 inch pieces. Carefully wash and chop the leeks, discarding the top few inches (the toughest green part). Peel and mince the garlic. Slowly saut茅 these ingredients in 1 tablespoon butter. Place in skillet on low heat for 5-10 minutes, then on medium-high until golden and crisp. (Add garlic last and do not allow to brown).


Wash, peel and slice potatoes into quarters. In a saucepan cover potatoes with water and bring to a boil. Add 2 teaspoons salt to water and reduce heat to a simmer, continuing to cook until tender (about 40 minutes). Drain and return potatoes to saucepan, mash potatoes in the still-hot pan while adding chunks of the butter.





When the butter melts, stir in the sour cream. Pour in the cream and milk; add salt and pepper to taste. Sprinkle with chopped chives and/or scallions, and optional cheese, if desired.What's a good potato soup recipes?

INGREDIENTS:


7 to 8 cups of cubed peeled potatoes


4 cups chicken broth


1 cup water


2 large onions, chopped, about 2 cups


3/4 cup chopped celery


1/2 cup thinly sliced carrots


2 tablespoons dried dill weed


1/4 cup butter


1/4 teaspoon pepper


1 to 2 teaspoons salt, or to taste


1 can (12 oz) evaporated milk


PREPARATION:


In a large slow cooker, combine potatoes, broth, water, onion, celery, carrots, dill weed, and butter. Cover and cook on high for 7 hours or until the vegetables are tender. Stir in milk and season with salt and pepper to taste; continue cooking to heat through.

Use a hand mixer or potato masher to blend some of the potatoes to thicken soup. To thicken further use instant potato flakes; to thin soup, add a little whole or skim milk.

Nacho Potato Soup





1 pkg au gratin potatoes ( 5 1/4 oz)


1 can Mexican corn, drained


1 can ( 10 oz) diced tomatoes with green chilis, undrained


2 C water


2 C milk


2 C cubed Velveeta





In sauce pan combine contents of potato pkg, corn, and water. Bring to a boil. Simmer for 15 min. or until potatoes are tender. Add milk and cheese. Cook until cheese is melted. Makes 2 quarts.








Creamy Potato Soup





4 C. cubed potatoes


1 C. diced celery


1 C. chopped onion


2 C water


1 C milk


1 C. whipping cream ( not whipped)


3 T butter


1 T dried parsley


1/2 t. caraway seeds





Combine first four ingredients and cook about 20 minutes or until potatoes are tender. Mash mixture once or twice but leave some chunks. Stir in remaining ingredients and cook, stirring frequently, until all is heated through. Yield: 7 C.
