Soup recipes?

fancy making some soup, i usually make stilton and broccolli or potato and leek, what's your favourite soup and how do you make it?Soup recipes?
A long time family favourite called pea wack (not sure why)





This is a meal soup made from a meal cheap and filling.





Boil a ham hock or bacon joint and have as your main meal one night keep the water you have boiled it in as the stock and reserve some of the meat for your soup.





Next day take your stock (skim off any fat if you need to - don't always depends on your meat) and boil with your veg, carrots onions are a must and any left overs from previous nights meal and use yellow split peas or lentils (soak if packet requires). Cook together for quite a long time and you may with to blend slightly but no need to as quite a thick soup I have made it with potatoes in and still only used a potatoe masher to blend it a bit before I owned a blender. Before you eat it stir in some of your reserved meat is a real meal and not a starter in any way shape or form. Do not add salt until the table as with the stock and added bacon/ham it often doesn't need it but you can add herbs and pepper at any point of cooking if you wish.Soup recipes?
minestrone soup





Ingredients :


100g green beans, chopped


2 carrots, sliced


1 courgette, sliced


1 small leek, sliced thinly


1 stick celery


2 tomatoes


3 cloves garlic


100g noodles


1 bouquet garni


5 or 6 basil leaves





Recipe :


Put all vegetables and herbs (apart from basil) in a large sauce pan, add 2litres water and bring to the boil.


Season.


Cover and leave to simmer for 20 minutes.


Add noodles and cook for a further 10 minutes.


Finally, add basil leaves and garlic and grated parmesan on top to serve.














Advice :


Serve with hunks of nutty bread.
This will stick to your ribs on a cold night. A piece of cornbread is a must.





Heart Baked Chili and Beans Soup





5 C. water


2 tsp. salt


1 lb dried pinto beans, washed


1 1/2 lbs ground beef


1(28 oz) can tomatoes


1 onion, diced


1 clove garlic, minced


1/4 C. chili powder





Bring water to biol. Add beans, cover and boil for 2 min. Remove from heat and let soak for one hour.





Brown beef in skillet with the onion, Drain grease. Add beef to the beans. Add all other ingredients. Cover and simmer for 2 hours or until beans are tender.
I love this chicken noodle soup recipe, although I do spice it up a little with thai 7 spice and flaked chilis.

Avgolemono Soup (Greek Lemon Rice Soup)


INGREDIENTS


1 (10.75 ounce) can condensed cream of chicken soup


1 1/4 cups milk


1/2 cup uncooked white rice


1 cup water


2 fluid ounces lemon juice





DIRECTIONS


In a medium sauce pan combine soup and milk. Heat through while whisking.


In a small sauce pan boil 1 cup water and uncooked rice. Reduce heat and simmer 20 minutes, or until tender.


Add rice to soup and cook until heated through. Add lemon juice in small increments until a subtle lemon taste develops. Serve warm.

Roasted Cauliflower Soup


INGREDIENTS


2 heads cauliflower, separated into florets


3 cloves garlic, chopped


2 shallots, chopped


1 tablespoon olive oil


3 cups chicken broth


1 cup water


1 bay leaf


1 teaspoon dried thyme


2 cups heavy cream


salt and pepper to taste





DIRECTIONS


Preheat the oven to 425 degrees F (220 degrees C). In a large bowl, toss cauliflower pieces with olive oil, garlic and shallots. Spread out in a roasting pan or baking sheet with sides.


Roast in the preheated oven until toasted and tender, about 30 minutes.


When the cauliflower is done, transfer to a soup pot and pour in the chicken broth and water. Season with thyme and the bay leaf and bring to a boil. Cook over medium heat for 30 minutes. Remove and discard the bay leaf.


Puree the soup in the pot using an immersion blender, or transfer to a blender and puree in batches, then return to the pot. Stir in the cream and season with salt and pepper. Heat through before serving but do not boil.
