Beetroot soup recipes?

I'm trying to find a quick and easy recipe that doesn't contain celery, cream or yoghurt.Beetroot soup recipes?
Beetroot soup


1 medium beet root dark


1 medium piece bottle gourd


1 small onion


1 small tomato


1 small potato


1/2 tsp sugar


salt, pepper to taste


1-2 tbsp. whipped cream


1 tsp chopped basil or coriander


Method





Clean, peel and chop vegetables into large chunks.


Pressure cook till soft.


Cool, blend in mixie and strain.


Add seasoning except chopped coriander and cream.


If desired, serve chilled with soup sticks.


Or Serve piping hot with hot garlic rolls.


In either case add a swirl of cream and some chopped coriander on top in each bowl.

Beetroot and Butterbean Soup:





50 min 5 min prep


2 servings





2 tablespoons olive oil


1 red onion, chopped


400 g beetroots, peeled and diced


800 ml vegetable stock


400 g butter beans, rinsed and drained


1 orange, juice and zest of


1 lemon, juice of


2 tablespoons yoghurt (optional)





1. Heat oil and soften the onion for 5 minutes.


2. Add beetroot and stir for a couple of minutes.


3. Add stock and bring to boil. Simmer for 40 minutes until tender.


4. Add beans, orange juice and zest and cook for 10 minutes.


5. Blend until smooth and add the lemon juice.


6. Serve with the yoghurt swirled in (if using).

i just saw 3 or 4 recipes on the site for beetroot soup. FREE site.
you definitely need beetroot.
