Does anyone have any idea what is in the Max & Erma's Tortilla Soup? Or any other tortilla soup recipes?

I absolutely LOVE the Tortilla soup from Max %26amp; Ermas. I would like to create something similar to it. Any ideas? Any other delicious cheesy tortilla soup ideas? Thank you!Does anyone have any idea what is in the Max %26amp; Erma's Tortilla Soup? Or any other tortilla soup recipes?
Hearty Chicken Tortilla Soup -- I cook this all the time!! DELISH!!!











INGREDIENTS


Vegetable cooking spray


1 pound skinless, boneless chicken breast, cut into 1-inch pieces


3 1/2 cups Chicken Broth


1 teaspoon ground cumin


1/2 cup uncooked regular long-grain white rice


1 (11 ounce) can whole kernel corn with red and green bell peppers, drained


1 cup Salsa


1 tablespoon chopped fresh cilantro leaves


2 tablespoons fresh lime juice


Crisp Tortilla Strips


4 corn tortillas


Cooking spray











DIRECTIONS


Spray a 6-quart sauce pot with cooking spray. Heat over medium-high heat for 1 minute. Add the chicken to the sauce pot. Cook until it's browned, stirring often.





Stir in the broth, cumin and rice. Heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes.





Stir in the corn, salsa, cilantro and lime juice. Cook until the rice is tender. Top each serving of soup with Crisp Tortilla Strips.





Crisp Tortilla Strips: Heat the oven to 425 degrees F. Cut 4 corn tortillas into thin strips and place them on a baking sheet. Spray with cooking spray. Bake for 10 minutes or until golden.Does anyone have any idea what is in the Max %26amp; Erma's Tortilla Soup? Or any other tortilla soup recipes?

Max %26amp; Erma's Chicken Tortilla Soup





Thought I'd post the one claim to fame that I have in a clone. It's yummy, and oh so easy.





2 cans Campbell's Cream of Mushroom soup


2 cans Campbell's Cream of Chicken soup


2 cans Campbell's Cream of Celery soup


2 cans Campbell's Cheddar Cheese soup


2 (15 ounce) cans chicken broth


1 (15 ounce) can diced tomatoes


1 cup Pace medium picante salsa


1 (4.5 ounce) can Ortega green chiles


1 medium onion, chopped


4 cloves fresh garlic, minced


1 teaspoon red chile powder, more or less to your taste


Salt and pepper to your taste


1/4 cup fresh, chopped cilantro


4 cooked chicken breasts, cut into


small chunks


1 package flour tortillas


1/2 pound longhorn style Colby cheese





In a large stockpot combine and whisk together until smooth all eight cans of soup. Add chicken broth. Add tomatoes, salsa, green chiles, onion, garlic, chili powder, salt and pepper.





Bring all ingredients to a full boil, reduce heat, and simmer for 1 hour.





Add cilantro and chicken breast chunks. Simmer another hour.





While soup is simmering, make your soup toppings: Cut flour tortillas into small thin strips and deep fry in hot oil until lightly browned.





Shred cheese.





To serve: Ladle soup into bowls, top with shredded cheese and fried tortilla strips. I double this recipe and use a 12-quart stockpot. Enjoy!

its like chicken broth onions green chilis chili powder cayenne pepper and shredded cooked chicken mix and heat till onions are soft put in bowl put chips on top with chopped tomato or salsa shredded cheese is nice too
