Any good soup recipes?

My prized recipe enjoy





Dan鈥檚 Tortilla Soup Recipe


6 tablespoons of vegt oil


8 (6inch tortillas) or bag of tortilla chips


6 cloves of garlic minced


陆 cup chopped cilantro


1 onion chopped


1(28-29oz.) can diced tomatoes


2 tablespoon ground cumin


1 tablespoon chili powder


3 bay leaves


6 cups chicken broth


1 tablespoon of salt


陆 teaspoon of ground cayenne pepper in case no cayenne ( use two seedless and slice) jalepeno鈥檚


5-6 boneless chicken breasts(cut into strips)


1 cup of corn





Directions:


1) Heat oil garlic, cilantro and onion saut茅 2 to 3 minutes





2) stir in tomatoes and bring to a boil , add cumin chili powder bay leaves and chicken stock ;return to a boil reduce heat to medium add salt and cayenne or jalepenos and corn. Simmer for 30 minutes remove bay leaves and stir in chicken , heat for 5 minutes .





3) Add corn or mushrooms or an additional ingredient of similar heartiness of your choice if you wish.





Serve garnish with crispy tortilla strips cubed avocado , shredded cheese or sour creamAny good soup recipes?

IRISH POTATO SOUP


1/2 c. butter 2 c. hot milk


1/2 c. finely chopped onion 1/2 c. cold milk


5 med. potatoes, peeled and quartered 1 egg yilk


1 1/2 c. water few grains cayenne


1 tsp. salt 2 tblsps. parsley


Melt butter in heavy pan over low heat.


Add onions, stirring until tender. Add potatoes,water and salt. Cover and let cook until potatoes are tender. Drain, reserving liquid, press potatoes through a seive and add to liquid. Add hot milk and stir well. Combine cold milk and beaten egg well. Add slowly to warm soup, stirring constantly. Add cayenne pepper and reheat soup slowly, do not boil. Adjust seasonings to taste. Add parsley,chopped, just before serving.

Taco Soup





1 pound extra lean ground beef -- rinsed and drained





1 Large onion -- chopped





48 ounces canned pinto beans -- drained





3 cans 16 ounces canned corn -- undrained





16 ounces canned tomatoes -- undrained





16 ounces tomato sauce





1 1/2 cups water





4 1/2 ounces green chili pepper





1 envelope Hidden Valley Dip Mix





--HOMEMADE TACO SEASONING-- --





1 1/4 ounces





2 tablespoons chili powder





1 1/2 tablespoons cumin





1/2 teaspoon red pepper flakes -- or powder





1 1/2 teaspoons garlic powder





1 1/2 teaspoons onion powder











Cook beef and onion until beef is browned; drain, mix beef and onion with other ingredients in a large pan. Bring mixture to boil, reduce heat and let simmer for 15 minutes.





Makes 3 1/2 quarts of soup. Make 14 (1 cup servings)





NOTE: This soup freezes well and can be kept in freezer for up to 3 months.





NOTES : Per serving: 215.5, 6.7g (26.9%), 6.1g fibre, 748mg sodium.3.65 points





VARIATIONS: Use black beans instead of pinto beans or do a mixture of them.











Black Bean Soup





鈥? pound dried black beans


鈥?/4 cup olive oil


鈥?/4 pound bacon


鈥?/4 pound diced ham


鈥? onions, chopped


鈥? garlic cloves, minced


鈥? stalks celery including leaves, chopped


鈥?-1/2 cups uncooked brown rice


鈥? teaspoon cayenne pepper


鈥? teaspoons ground cumin


鈥? quarts chicken broth


鈥?/4 cup dry white wine


鈥?/2 cup dry sherry


Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside.


Pour oil into a large soup pot. Add the bacon, ham, onion, garlic and celery. Cook at high simmer until vegetables are soft, about 30 minutes. Add beans, rice, seasonings, and broth to soup pot. Bring to a boil; reduce heat, cover and simmer 2-1/2 to 3 hours.


Let soup cool; put through the blender a little at a time, until smooth. Return to soup pot; reheat on low about 45 minutes, adding wine and sherry. Serve hot.











Stuffed Bell Pepper Soup





2-T. olive oil


1-T. minced garlic


2-cups chopped onions


3-large bell peppers, chopped into 录';squares.


2-14.Soz.cans sliced stewed tomatoes


1-pound ground chuck


1-8oz, cans tomato paste


2-cups long grain white rice, cooked


1-tsp basil


1-T. parsley flakes


录-cup soy sauce


录-cup red wine





Put the hamburger in a wok. Season it with the minced garlic. Brown it and drain it, set aside. Now add the olive oil and chopped bell peppers. Cook the peppers until they start to wilt. At that point add the burger back to the wok with the peppers. Now add the tomato paste, 1-can water, and the 2 cans of stewed tomatoes. After the tomato paste is dissolved into normal juice add the basil, parsley, soy sauce and red wine. When it starts to boil, add 2 white rice. Let it cook at a simmering boil for 10 minutes. It is ready to serve. Serves 6 to 8
I based the recipe for this spicy soup on Food %26amp; Wine's curried mulligatawny . It is extremely filling and makes a nice lunch or light supper.








1/4 cup olive oil


1 large onion - finely chopped


2 medium carrots - finely diced


1 1/2 tablespoons ginger - finely grated


2 teaspoons curry powder


1 teaspoon cumin


1/2 teaspoon ground coriander


1/2 teaspoon cayenne pepper


1/2 teaspoon black pepper


2 quarts chicken stock


4 cups chicken - shredded


1/2 pound potato - peeled and diced


1 cup lentils - red


1/2 teaspoon thyme


2 medium Granny Smith apples


2 tablespoons lemon juice


1/2 cup shredded coconut meat








Heat the olive oil in a large Dutch oven. Add the onion, cover and cook over moderately high heat, stirring occasionally, until translucent (3 minutes).


Add the carrots, garlic, and ginger to the pot. Cover and cook for 3 minutes, stirring occasionally. Add the curry powder, cumin, coriander, cayenne, and black pepper and stir until fragrant, about 1 minute.





Add the chicken stock, potatoes, and lentils and bring to a boil over medium high heat. add the thyme, simmer and cover for 10 minutes.





In the meantime, peel and core the apples, then cut into a 1/2 inch dice. Place in a medium bowl and toss with the lemon juice. Add the apples to the soup and bring to a boil over medium high heat. Lower the heat and simmer, covered until the potatoes and apples are tender (8 minutes).





Meanwhile, preheat the oven to 350 degree F. Spread the shredded coconut on a small baking sheet and toast until golden (6 to 8 minutes).





Add the shredded chicken to the soup and cook until the chicken is heated through. Season with salt. Ladle the soup into bowls and garnish each serving with a spoonful of yogurt and a sprinkling of coconut.
