Loaded Baked Potato Soup
2 cups chicken broth
3 med. potatoes - peeled, cubed
2 green onions - trimmed, sliced
1/2 rib celery - minced
1/4 med. carrot - grated
2 tsp. distilled white vinegar
1 tsp. salt
1 1/2 cups milk mixed with 2 Tbls. all-purpose flour
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
2-6 strips cooked bacon - crumbled( I like alot)
-Bring first 7 ingredients to boil in a saucepan over medium-high heat. Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
-Whisk the milk/flour mixture into the soup, then stir in cheese and bacon.
-Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.

Nacho Potato Soup
1 pkg au gratin potatoes
1 can corn, ( 11 oz )drained
1 can ( 10 oz) diced tomatoes and green chilis, undrained
2 C. water
2 C. milk
2 C. Velveeta, cubed
dash or two of hot sauce
minced parsley
1) combine the contents of the potato pkg., corn, tomatoes, water. Bring to a boil, reduce heat, simmer 215 minutes.
2) Add milk, cheese and cook until creamy and smooth.
3) Garnish with parsley

Cream of Broccoli Soup
INGREDIENTS
* 2 tablespoons margarine
* 1 onion, chopped
* 1 stalk celery, chopped
* 3 cups chicken broth
* 8 cups broccoli florets
* 3 tablespoons margarine
* 3 tablespoons all-purpose flour
* 2 cups milk
* ground black pepper to taste
DIRECTIONS
1. Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender.
2. Add broccoli and broth, cover and simmer for 10 minutes. Puree soup and return to heat.
3. In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

sopa de camaron-my mom used to make this for us whenever it was really rainy (which was every summer in south florida!). the soup is deep and flavorful without being overly spicey. you can add red pepper flakes if you want it hotter. skip the cream and finish off with a squeeze of lime juice, for a lighter version. this pairs well with spicy wines like south-african shiraz. i serve with warm bread and a spinach salad.
coat bottom of a soup pot with olive oil. add:
1 onion, rough chopped
3 cloves of garlic, smashed
2 celery stalks, diced
2 red bell peppers, diced
cook until tender. then add:
1 can crushed tomatoes
1 box shrimp stock
1 pinch saffron
2 tbsp butter
1 pack frozen corn kernels (or fresh corn, not canned)
fresh black pepper
1 sprig of thyme, whole
simmer for 5 minutes
add 1 (entire) cup of red wine (i like a spicy shiraz)
boil down for 20 minutes.
add 1/2 cup of rice
boil for 10 minutes.
add:
shrimp (1/2 lb, peeled, devained)
baby bay scallops (1/2 lb)
cook for an additional 10 minutes.
turn off heat.
add 1/4 c. cream
keep on low simmer until serving.
serve with warm bread and salad.
