Best tomato basil soup recipes?

What are your favorite tomato basil soup recipes? Which ones would you recommend?

Tomato Basil Soup





INGREDIENTS


1 tablespoon olive oil


3 teaspoons minced garlic


1/4 cup minced onion


1 cup tomato paste


1 quart chicken broth


1 cup diced tomatoes


3 teaspoons dried basil


1/2 teaspoon dried marjoram


1/4 teaspoon dried oregano


1/8 teaspoon dried thyme


1/4 cup dry white wine


1 bay leaf











DIRECTIONS


In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato paste and cook until the color is rusty. Pour in chicken broth, and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil, then reduce heat and simmer 30 minutes.














Creamy Tomato %26amp; Basil Soup





INGREDIENTS


4 tomatoes - peeled, seeded and diced


4 cups tomato juice


14 leaves fresh basil


1/2 onion finely chopped


2 teaspoon ground garlic


1 cup heavy whipping cream


1/2 cup butter


salt and pepper to taste











DIRECTIONS


Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves,onion, garlic and return the puree to the stock pot.


Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.














Tomato Spinach Basil Soup





INGREDIENTS


2 tablespoons butter


1 large yellow onion, chopped


3 teaspoon minced garlic


1 1/2 cups milk


1 (28 ounce) can tomato puree


1 tablespoon white sugar


2 cups fresh spinach, torn


1/2 cup chopped fresh basil


1/2 teaspoon salt


1/4 teaspoon freshly ground black pepper


1 tablespoon grated Parmesan cheese











DIRECTIONS


Melt butter in a large saucepan over medium heat. Saute onion and garlic for 3 minutes. Stir in milk and cook for 2 minutes, stirring occasionally. Stir in tomato puree and sugar. Mix well, cover and bring to a boil over high heat. Reduce heat to low and simmer, covered, for 5 minutes. Add spinach, basil, salt and pepper and simmer, uncovered, for 2 minutes, stirring occasionally. Sprinkle with parmesan cheese, if desired.Best tomato basil soup recipes?
