What are some good cheap homemade tomato soup recipes?

On Wednesday at church we are having a Lenten soup supper before church and I am going to make soup. I would like to make a tomato soup the serves 12 or more people. Nobody has made a tomato soup yet and that is my favorite soup.What are some good cheap homemade tomato soup recipes?
The following recipe is easily doubled, and my family loves it. I got it from a ';Taste of Home'; magazine years ago. It serves six, so remember to get two cans (or bottles) of tomato juice at the store. Also, we like curry, but if you don't, just leave it out. It's not critical.





Ingredients:





* 1/4 cup butter


* 1/4 cup all-purpose flour


* 1 teaspoon curry powder


* 1/4 teaspoon onion powder


* 1 can (46 ounces) tomato juice


* 1/4 cup sugar


* Oyster crackers, optional





Directions:


In a large saucepan, melt butter. Stir in flour, curry powder and onion powder until smooth. Gradually add tomato juice and sugar. Cook, uncovered, until thickened and heated through, about 5 minutes. Serve with crackers if desired. Yield: 6 servings.What are some good cheap homemade tomato soup recipes?
I used to make a creamy tomato bisque soup at my MILresturant, it alsqays went over very well and sold very fast.





Saute some onions, garlic, celery, and carrots that have been rough chopped. Add a couple cans of diced stewed tomatoes, add soem mushromms, bell peppers, zucchini, yellow crooked neck squash, corn, peas, green beans, spinach etc...





What ever veggies are on sale or you have in your fridge. Add water as needed and even a chicken or veggie bullion cube or 2 season with onion powder, garlic powder, seasoned salt,celery salt, pepper etc... to taste.





When everything is good and tender. Put it all in a blender or food processor and make it fairley smooth, it will still be a bit chunky though, that's okay. You will need to to do this in batches and in one of the bacthes add a scoop or 2 of sour cream or even some cream cheese, process to make sure it is good and mixed up.





Return to pot and heat it back up. Adust seasonings as needed.
Super quick and simple, add as many cans of seasoned stewed tomatoes to as many cans of canned tomato soup. Add a dash of red pepper flakes. Taste like homemade.
