Potato soup.....easiest there is. Peel and cut the potato into chunks. Simmer them until just fork tender ,drain (save some of the cooking water) and take out about 1/3-1/4 of them to a separate container. Mash the rest with a masher or electric mixer, add a bit of butter, milk, salt and pepper and a little of the cooking water (the ratio of water to milk is a personal preference: like it creamier, use more milk, like it not so rich, use more water): Add the remaining potatoes and heat just to ';soup hot';. Enjoy!


If you like, while the potatoes are cooking, cut a stalk of celery, dice an onion, and shred a carrot. Saute the celery and onion in a bit of butter until just tender and add to the finished soup. Cook the shredded carrot separatly, as it will get done long before the rest, and add it to the finished product.

ZESTY BEEF AND VEGETABLE SOUP





1 pound ground beef


1/2 cup chopped onion


2 cloves garlic, minced


2 cups pre-shredded coleslaw mix


1 (10 ounce) package frozen corn


1 (9 ounce) package frozen cut green beans


1 (46 ounce) jar on Hot Spicy V-8 juice


1 (15 ounce) can diced tomatoes (Italian style)


2 tablespoons Worcestershire sauce


1 teaspoon dried basil


1/4 teaspoon black pepper





In a large saucepan, cook ground beef, onions and garlic until meat is brown and onion is tender. Drain well. Put meat mixture back in saucepan and add the remaining ingredients. Cover, bring to a boil, then reduce heat to simmer. Cook for one hour.





Yield: 6 large servings











TACO SOUP





1 pound lean ground beef


1 package dry ranch dressing mix


1 package dry taco seasoning


1 medium onion, diced


1 can black beans


1 can chili beans


1 can diced tomatoes (Mexican recipe)


1 can diced tomatoes (Italian recipe)


1 can whole kernel corn





Brown ground beef with onion in large pot, drain well. Add ranch dressing mix and taco seasoning mix. Add all other ingredients (don鈥檛 drain cans). Cook for about 1 陆 hours or in a slow cooker all day.





Yield: about 8 servings
Homemade vegetable beef (or without beef) soup


1 lb. stew meat, cut into bite size pieces


6 cups water


1/4 to 1/2 onion, chopped


2 cans (51/2oz. each) tomato juice , regular or V8


2 teaspoons salt and enough pepper to taste


2 teaspoons Worcestershire sauce


Simmer 2 hours if using stew meat, then add:


1/2 to 1 cup celery, chopped


1 cup carrots, sliced into quarters


2 red potatoes, cut into chunks


1 small can whole green beans


1 small can whole kernel or creamed style corn


1 (151/2oz. or 28oz.) can whole tomatoes, cut up


Simmer 45 minutes to 1 hour until veggies are tender


Can omit stew meat, and 2 hour cooking time, and use all other ingredients to make soup and add other ingredients of your choice; green peas, 1/2 cup noodles or broken spaghetti noodles, etc.


Good on a cold day or just good for the soul.


Add cornbread and you have a delicious, nutritious and filling meal!
The most affordable way to make soup is to start a soup bucket in the freezer or to use a large ziploc bag. When you have leftover veggies like peas, carrots, potatoes, tomatoes, zuchinni and just about any veggie, toss them in the freezer. Once the bag is full, take them out and make a broth with some canned stewed tomatoes (get the flavored can of your choice) that you puree in the blender. Then add it all to a pot with the spices of your choice and simmer. Add rice or noodles and you have soup.





And don't forget to save that carcass when you have roasted chicken or turkey and put it in a stock pot with water, celery, onions, a little garlic, etc and boil it all day. Then cool it and strain it and any meat left on the bone can be put back in the broth. Then you have tasty chicken stock for soup. Just put in ziploc bags (once cooled) and lay them flat in a deep pan until frozen (in case you spring a leak). And when you have leftover chicken, beef or turkey, cube it up and put it in a seperate bag in the freezer. Then you have the meat of your choice for your soup. Steak, roasts, even hamburger meat go great in a rich tomato soup with veggies. And the best part is the money you save by not wasting food.





Soups are best when you don't use a recipe. Be creative. Taste it as you go and do not be afraid to try new things. And if you want a smooth creamy soup by an immersion blender and use it. And to thicken soups always use potato flakes (instant mashed potatoes) or put a cooked, diced potato in the broth and use your immersion blender. Thickens and adds a richness that cornstarch never will.
Peel and cut up some carrots, and sate them in a little bit of oil at the bottom of a medium sized pot. Cut up as many as you would like. Add any kind of veggies that you like, cabbage, green and yellow beans, pea's, corn, anything that you like, add all of that too the pot after you have slightly cooked the carrots in that little bit of oil.Buy Campbell's already prepared fat free broth, it is in a box in the soup isle usually, and buy a can of tomato paste, use two tbsp. Add the tomato paste and the full container of broth too the pot with the veggies, bring it to a boil and then bring it down to a simmer, or small boil. Cook the soup until the veggies are tender. You can add any spices you like, basil and oregano are nice. This is a very healthy soup and is extremely low on calories too.

2lbs hambuger cook with 1 onion cut up and drain


add one package of taco seasoning


add about 6 cups water


peel and slice into 4 cubes per potatoe10-12 potatoes


add 1 package of frozen mixed veggies the 1 lb bag


and cook till potatoes are done and you have enough for a family of 6 with left overs to spare.
well you can buy the best soup at the grocery. at u.s grocers, they have such a vast assortment that it's probably best to just check out what you can find.
