Will you share your favorite soup recipes with me?

I like eating soups when it is cold outside but I only know how to make chicken noodle soup and vegetable beef. I would like to try some new ones that real people recommend. The only things I really don't like are ham, eggs, mushroom, and beans, but if those items can be left out of the recipe I would try it.

Indian Summer Soup---comes from a recipe from ';Good Eats'; resturant








3-4 Chicken Breast halves skin on (about 2-3 lbs.)


1 Medium Onion (diced)


1 or 2 Poblano Peppers


1 8-oz can of Mushrooms


1 15 oz can whole Kernel Corn


3-4 cloves of fresh Garlic (minced)


Butter


Vegetable Oil


Creole Seasoning (Tony Chachere鈥檚 or Zatarains)


Salt and Pepper


4 Tablespoons Cornstarch


3 14 oz cans of Chicken Broth


4 cups of Water


1 and 陆 to 2 lbs. of Velveeta Cheese (cubed)





Start by oiling the chicken and season with a good amount of Creole seasoning. Grill outdoors or broil in the oven. Set aside to cool. Toss the skin and de-bone the chicken. Roughly chop the chicken into eatable pieces for soup size.





Place your Poblano peppers in an oven broiler, hot cast iron skillet or on the grill. You want to char the skin slightly cooking the flesh. Turn as needed to do all sides of the pepper. Don鈥檛 burn it, but don鈥檛 worry about a little black skin. When done wrap in a wet paper towel and seal inside of a plastic bag. Set aside for 5-10 minutes. Remove skin and cut off stem and remove seeds. Dice flesh of pepper.





Dice onions and roughly chop the mushrooms. Add to a non-stick stockpot along with the peppers and some butter and saut茅 until onions are clear and soft. Add minced garlic towards the end of this so as not to burn the garlic.





Add chicken, chicken broth, water and corn to the same stockpot. Heat with medium heat. Do not boil! Mix and simmer for 5 minutes.





Add cubed cheese to the pot and simmer until melted. Do not boil!





Stir cornstarch into 1 cup of COLD water until dissolved. Add to the soup continuing to stir through.





Add some crushed black pepper and salt and Creole seasoning to taste at the end.

Here is my all time favorite soup.


Very original lemony soup that is so easy to make.


You will need:


1/2 pound lean ground beef


1 large onion grated


1/2 cup rice (arborio)


1 egg


Mint,dry or fresh


Salt,pepper


Mix all the ingredients together very well and make small meat balls.


In a heavy pot add :


8 cups water


2 tbsp chicken base


1/4 cup olive oil


Salt,pepper bring to boil and add meat balls.


Adjust heat and simmer for 30,40 min.


Remove from heat and let cool for 8 min.


You can make the egg lemon sauce or (avgolemono)very popular with this soup.


You need 1 egg,the juice of a lemon and a little liquid from the soup.


Beat the egg with mixer for 2,3 min.and gradually add the liquids to the egg .


Pour egg mixture in soup and stir your soup gently.


Do not boil after this point.


Your soup is ready,enjoy something so easy and yet so delicious.
