Do you have any EASY and delicious soup recipes?

I want to take soup to work this week and want something I can put together quickly today to take this week. Any suggestions? Only tried and tested recipes, please.Do you have any EASY and delicious soup recipes?
This is one of my favorites, especially on a cold evening...





Hearty Hamburger Soup





2 lb. hamburger


1 small onion


2 cans alphabet soup


2 cans cream of tomato soup


陆 big block of Velveeta, cubed





Cook hamburger with onions. Drain. Add the rest of ingredients. Cook on low, stirring frequently, until cheese melts and it鈥檚 heated through. Could be made in crock pot by cooking the beef and onions and putting all ingredients together in the crock pot until heated through鈥bout 4 hours on low.Do you have any EASY and delicious soup recipes?
I've tried and tested this recipe many times! It's different, delicious, and even healthy.





Stuffed Green Pepper Soup





1 lb ground beer (I've also used turkey)


1 envelope dry onion soup mix


1-14.5 oz can diced tomatoes


1-15 oz can tomato sauce


1 cup white rice, cooked (I've also used brown rice)


2 green peppers, chopped


1 beef bouillon cube


1/8 cup brown sugar


2 tablespoons apple cider vinegar


1-1/4 cups water





Brown beef in a large kettle and drain. Stir in dry soup mix and heat.





Add remaining ingredients (excepting rice) and bring to a boil. Reduce heat and simmer until peppers are soft (about 30 minutes). Add rice and heat.
Tortellini Soup





1 pound Italian sausage -can also be made with chicken breast


1 cup chopped onion


2 cloves garlic, minced


5 cups beef broth


1/2 cup water


1/2 cup dry red wine (optional)


8 ounces fresh tortellini pasta


1 cup sliced carrots


2 cups stewed tomatoes


1/2 teaspoon dried basil


1/2 teaspoon dried oregano


8 ounces tomato sauce


1 1/2 cups sliced zucchini (optional)


2 green bell peppers, seeded and cubed


3 tablespoons chopped fresh parsley


freshly grated parmesan cheese








Directions





Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.





Cook onion and garlic in the drippings until tender. Add broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.





Add zucchini, green peppers, parsley, and tortellini. Simmer another 25 minutes, covered, for fresh tortellini, or 45 minutes, covered, for frozen tortellini. Serve with fresh parmesan cheese sprinkled over the top.

Creamy Mushroom Soup





5 cups sliced fresh mushrooms


1 1/2 cups chicken broth


1/2 cup chopped onion


1/8 teaspoon dried thyme


3 tablespoons butter


3 tablespoons all-purpose flour


1/4 teaspoon salt


1/4 teaspoon ground black pepper


1 cup half-and-half


1 tablespoon sherry








Directions





In a large heavy saucepan, cook mushrooms in the broth with onion and thyme until tender, about 10 to 15 minutes.





In blender or food processor, puree the mixture , leaving some chunks of vegetable in it. Set aside. (This step is optional, but gives a smoother texture)





In the saucepan, melt the butter, whisk in the flour until smooth. Add the salt, pepper, half and half and vegetable puree. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasonings to taste, and add sherry.
White bean soup and spinach





3 tablespoon olive oil





1 onion , finely chopped





2 garlic cloves, crushed





2 x 400g cans white beans





2 tablespoon tomatoes paste





1 litre of chicken stock





salt %26amp; pepper








To Finish





2 Tablespoon extra virgin oil





500g spinach





2 tablespoons grated parmesan





Heat Olive oil in large pot, add onions, celery and garlic and cook for 10 minutes until softened. Drain and rinse the beans and add to the pot with the tomato paste, hot stock. Cook gently, stirring occasionally for 20 minutes. Salt %26amp; Pepper to taste.





Remove a ladle or two of the beans and mash or puree them, return to the soup to thicken it.





For the greens , heat the oil in a frying a pan, add the leaves and a dash of water and cook over a high heat, tossing constantly until the wilted. Drain well and roughly chop. Add back to the soup and serve with parmesan cheese on top.
Here's my 2 favorite soups and I think they're both easy.





Tomato-Basil Soup (Spicy or not, your choice)


Serves 2





Ingredients:


1/2 small onion, cut in chunks


1 clove garlic


2 teaspoons olive oil


1 teaspoon dried basil


salt and pepper


1 can tomato soup


about 3/4 cup whole milk


about 3/4 cup half and half or heavy cream


1 teaspoon of your favorite hot sauce (optional)


2 sprigs fresh basil, chopped


spoonful of sour cream (optional)


1 sprig fresh basil for garnish (optional)





Directions:


Put onion and garlic in a food processor or blender and blend to a smooth puree. Put olive oil in a small pot and heat on medium low. Add pureed onions and garlic, dried basil, salt and pepper. Saute for a few minutes to incorporate flavors. Don't let it turn brown at all. Add tomato soup. Fill can 1/2 way with milk and to the top with half and half or cream. Pour into pot. Add hot sauce, if desired and whisk soup until heated through. Add chopped fresh basil and stir. Top with a dollop of sour cream (if desired) and a leaf of fresh basil.


Note: This recipe can be easily doubled, tripled or more!








minestrone soup


(makes 3 quarts)





ingredients:


2 tbl. olive oil


2 tbl. butter


2 lg. onions, minced


6 cloves garlic, minced


3 lg. carrots, diced


4 lg. celery stalks, diced


1 lg. green bell pepper, diced


1 tbl. dried oregano


1 tbl. dried basil


2 tsp. dried marjoram


1 tsp. dried thyme


录 tsp. red pepper flakes


salt and pepper, to taste


1 cup beef or chicken stock


1 lg. can, whole peeled tomatoes


(cut tomatoes up into large pieces and put back in can with juice)


1 qt. tomato juice


戮 cup dried pasta (ditalini)


1 cup canned kidney beans


med. size chunk of good parmesan


6 fresh basil tops





method:


heat olive oil and butter in a large pot. add onion, garlic, carrots, celery, and green pepper. cover pot and saute 15 minutes or until vegetables are soft. add oregano, basil, marjoram, thyme, pepper flakes, salt and pepper. stir and cook 5 more minutes. add stock, tomatoes and juice. stir, cover and simmer 1 hour. add pasta and beans simmer 10-15 minutes, or until pasta is cooked. ladle into bowls and grate parmesan on top. garnish with basil leaf and serve.
Caldo Verde (aka New England/Portuguese Kale Soup)





This is all pretty much to taste, so I'm just going to give it in a block.





Heat up some olive oil in a pan and dice up an onion. Cook the onion with some salt over medium heat until it's soft and translucent, then add some garlic and a few handfuls of diced linguica sausage. Heat that all through, then add some cooked pinto beans, a few big handfuls of chopped kale or collard greens, and then add enough chicken broth to make it soup. Cook until the kale is wilted and serve with bread and beer.
